Healthy Whole Wheat Pancakes Recipe

This is the healthiest pancake recipe that my kids REALLY chow down on. Now, I will admit that this recipe has literally evolved over time. Therefore, my children didn't notice the small healthy changes I made to it each time I made them. This recipe calls for one egg or egg substitute. Egg Substitute is listed in many low fat or low cholesterol recipes as an alternative to whole eggs. Egg substitute looks a lot like beaten eggs, but what’s it made of? Well, most egg substitute products—fresh, frozen or powdered—contain mostly egg whites, so if you have an egg allergy, these are not suitable as egg alternatives. But egg substitute is an excellent alternative to eggs if you want to cut your intake of fat and cholesterol, which are concentrated in the egg’s yolk.

Healthy Broccoli Salad

Cruciferous vegetables are known to have protective effects against cancer. DIM is destroyed by cooking – so getting some raw seems like a good idea. Diindolylmethane (DIM) is being studied at UC Berkeley for its role in cancer therapy. DIM is found in raw cruciferous vegetables like broccoli, cabbage, brussels sprouts, cauliflower and kale. There is the popular broccoli salad with mayonnaise, sugar and bacon, but I wanted a healthier version. Here is what I came up with. I love it when healthy habits taste so great.

Hazelnut Fudge Delight

For those of you who love nuts and chocolate this is a fabulous treat. Since the cake is mostly nuts and eggs it is quite healthy and I use 72% or higher dark chocolate for the fudge so it is not overly sweet. Don’t be scared by the 3c of icing sugar. You need that much to offset the 8oz of dark chocolate. I have made this as a rolled cake but the cake is very dense and cracks easily. For your first try cut the cake into 4 equal rectangles and stack it with fudge between each layer and frost with remaining fudge all round.

Okay my question is about Calories. With the New Year here, I am starting to reduce my food intake, eat real foods and have started walking. I would really like to lose some weight. I am unsure how many calories a day I should aim for. Do you have any idea of how many calories a woman in her 50’s should take a day? Thank you from Cathy, Oliver

Hello Cathy,
Thank you for this great question. Your daily Calorie intake depends on your current weight and height. One option is to use a personal ‘Women's Calorie Calculator’.
Such as one this web page for woman and this web page for a Men's Calorie Calculator.

All you need to do is add in your current weight, height and your age and it will give you results that will help you determine the calorie count you need to maintain your current weight or to achieve your goal weight in a healthy and steady manner.

Another option is to also look for a health coach or try a fitness class or join a walking group. Having support is an important step to a healthy lifestyle that works best for you.

Chapter 10: Pay Attention


In this chapter Rubin explores what has typically been one of the most challenging aspects in my growth journey, that being Mindfulness.

That being said, through the years I have discovered my favorite mindfulness strategy for grounding myself in the present moment; checking in with my breath, my body, and my surroundings. Of course, it goes without saying that I must first recognize when I am not in the present moment...which can sometimes take awhile! It is somewhat disconcerting to realize how often our minds simply wander somewhere else - all the more reason to have an awareness tool that can support us in being present-moment focused.

Another interesting topic was examining "True Rules" for making decisions and setting priorities. One of the truths I have been living by for years now is the following: "It's not what you do, it's how you do it" which translates quite nicely into a handy decision making technique: 'It's not what you choose, it's how you choose it!" In otherwords, if I am doing things or choosing things that come from a place of should's, have-to's, obligation, or guilt - it doesn't seem to matter what I do, it rarely works out well, and on the other hand, when I choose things while in alignment with what’s important to me while remaining true to my values, things always seem to work out for the best for all who are involved, it's quite amazing really.

I happen to come from a grounding that our rules are not inherently good or bad, right or wrong...they simply create results. It is our job therefore to look at the results and consciously decide whether or not we are satisfied and adjust accordingly.
If we desire new results, stimulating the mind in new ways is a wonderful strategy for growth. Whether we use a non-dominant hand for day-to-day tasks or concentrate on a new way of doing something, it really forces us to be present and show up 100% for the task at hand, something that we can often get away without doing when operating out of my areas of expertise, or habit.

I particularly enjoyed the idea one of her reader's had for changing passwords that she used so often in a day to reflect an affirmation, or a goal she might be working on, what a great way to further engage the reticular activating system...I think I am going to adopt that one myself!
