Portobello Mushroom, Goat Cheese and Walnut Sliders

This bite-size mushroom burger makes a tasty meat-free option at summer barbecues. Portobello mushrooms, sometimes also spelled portabella, are actually the same species as a crimini mushroom. Generally, the mushroom is called a crimini when small and a portabello when its cap has grown to about four to six inches in diameter. These large brown mushrooms have a meaty texture and can be grilled, roasted or used as an ingredient in other dishes. One cup of sliced portobello mushrooms, approximately 121 g, makes up a single serving and has only 42 calories. There is 1 g of fat and 5 g of protein in a cup of sliced portobello mushrooms. The total carbohydrate content of a serving of portobello mushrooms is 6 g, of which 3 g is fiber. Water makes up 108 g of the total weight of a 1-cup serving. There are only 12 mg of sodium in a cup of portobello mushrooms, so it is considered a low-sodium food. A 1-cup serving of portobello mushrooms supplies 31 percent of the daily recommended intake of selenium, or 21.4 mcg. It also contains 30 percent of the recommendation for copper and 18 percent of the requirement for both phosphorus and potassium. Other minerals in portabello mushrooms include iron, magnesium, manganese, calcium and zinc. In a serving of portobello mushrooms, there is 7.2 mg of the vitamin niacin, or 36 percent of the daily recommended intake, and 0.6 mg of riboflavin, or 34 percent of the recommendation for that vitamin. Portabello mushrooms also contain the vitamins pantothenic acid, folate, choline, vitamin B6 and thiamin, also known as vitamin B1. The nutrient betaine is also found in portabello mushrooms. Mushrooms also contain compounds called purines, which may cause health problems in individuals with gout. People with this condition may want to avoid eating portobello mushrooms. More antioxidant activity is found in the caps of mushrooms than in the stems. Unlike many other foods, most of the antioxidant level in mushrooms is not destroyed by cooking.

Cherries can be sweet or sour, red or black. My favorite varieties are the big black ones. We used to enjoy “Bing” cherries I commonly now see a variety called “Lapins”. Cherries contain anthocyanins, the red pigment in berries. Cherry anthocyanins have been shown to reduce pain and inflammation. Anthocyanins are also potent antioxidants. In addition, they appear to significantly lower blood levels of cholesterol and triglycerides. Cherries are considered a warm food and are great for increasing circulation. They make an excellent detoxifying food, helping the body eliminate uric acid and cleanse the kidneys. They contain ellagic acid, an anticancer compound. So, not only do they taste fabulous, they are also very healthy. A word of caution, cherries are considered to be part of the “”Dirty Dozen” when it comes to fruits and vegetables that have been found to contain the highest levels of pesticide residues. So, it is vitally important to choose only organically grown cherries. They may be considerably more expensive, but your health is worth every extra penny you spend. Fresh cherries are best stored in a bag in the fruit drawer of your refrigerator. They can also be pitted and frozen into serving sized portions.

Hello OK In Health eMagazine
I am a mum with two active kids and a part-time job. Recently I have been lagging in energy. I saw my doctor and she said all was fine but to try to get more rest. I did try coffee and those energy drinks but quickly realized they were not the answer. Does your team have any suggestions for me to try?

Hello Tracy,
Have you considered going to see a naturopath? They have tests that can tell you how your whole body is doing and also look at the foods you are eating. You could also go to a practitioner that offers a biofeedback machine too. A nutritionist can look at your diet in detail. A fitness coach might help you with finding an exercise routine that will give you more energy. Finding the time with a family can be hard but you will find you will have more energy. Are you sleeping okay or getting enough sleep? If not, talk to your natural health store vitamin staff about supplements such a melatonin and some other supplement that may support your adrenals. Green drinks are a great way to give you energy and help to keep your in PH balance. Meditation is a great stress reliever. As you can see there are a lot of roads to follow and things to try. I would recommend visiting one of your local naturopaths or professional health care providers in your area.

Tip of the Week:

We are at the mid-point in the season and Mercury is about to turn direct after it’s tri-annual 3 week retreat. Planets do not actually stop in their tracks and actually go backwards, yet they appear to do so. The linear fact is the planets maintain one motion around the Sun just as they ever have. However, the experiential reality is that the planets do in fact appear to slow down to an eventual full stop and then begin to move backward for a while, only to slow down and stop again and then resume their ‘normal’ course. Astrologers have long noticed effects both in outer events and perhaps especially psychologically in people. This aspect of Astrology has evolved especially in Western Astrology which has and continues to increasingly lean towards a psychological and spiritual evolutionary principle.
