Publisher's Message ~ June 2012 Issue

THANK YOU OK In Health members,
One year ago our world turned upside down and we went on a crazy roller coaster ride. Our eldest daughter got stage three acute kidney disease caused by a rare form of vasculitis of the organs. A year later she is doing much better. Kidneys look like they are healed and although still suffering from fatigue she is on the road to recovery. We now are looking forward to a wonderful summer and her returning to high school this Fall.  I want to take this opportunity to say thank you to everyone for your amazing support, distance healing and prayers last year. A special thanks to B.C.’s Children’s Hospital, Hope Air, BC Variety Club, and the best kidney pediatrician Dr. Jugnauth. I would like to invite all our members in sending distance healing, love and light to all the children sick in hospital or at home.

Fresh Cherry Crisp

What says summer more than cherries? This is a delicious cherry crisp made with fresh cherries instead of canned. It may take a little longer to make because you need to pit the cherries, but it is well worth it when you taste the finished product. The nutritional benefits of cherries are pretty big, particularly when you consider their small size. Many of the health benefits of cherries are related to the natural chemical that gives them their color. Anthocyanins give flowers, berries and other fruits the colors ranging from red to blue. Some of the best food sources of anthocyanins are red grapes, chokeberry, eggplant and, of course, cherries. These pigments attract pollinators, act as a “sunscreen” and protect the plant from radicals formed by UV light, so they act as antioxidants. The antioxidant benefits are transferred to people when the fruits or vegetables are eaten. Anthocyanins are also natural pain relievers and anti-inflammatories. They inhibit the production of COX-2 enzymes, as do over the counter and prescription pain relievers. Natural anti-inflammatories are believed to reduce the risk of many types of cancer. But, there are more nutritional benefits of cherries. Cherries contain melatonin, another natural pain reliever and COX-2 inhibitor. Melatonin also helps to regulate sleep cycles and has been sold as a natural sleep aid. Reduced levels of melatonin have been associated with heart disease and increased cancer rates in night workers. The human body naturally produces melatonin, but primarily in darkness. Constant artificial lighting present in most homes and work places reduces the amount of melatonin that the body produces. So, one of the health benefits of cherries to modern day man has to do with replacing some of the melatonin that has been lost to artificial light, unhealthy work schedules and unnatural sleep patterns. And, there are more nutritional benefits of cherries. Cherries, like most fruits, contain vitamin C. The proven and suspected health benefits of cherries and other vitamin C rich foods are too numerous to be covered in this recipe.

Eggless, Gluten and Dairy Free Chocolate Cake

I have had many requests for egg free recipes so in book 3 I have included several recipes that are gluten, dairy and egg free. This cake turns out surprisingly light and not too sweet. Be sure the cocoa is dairy free. ½ the recipe makes and 9” square cake. For a large gathering make a full recipe in a large jellyroll pan so you get more, smaller servings. This recipe uses Xanthan Gum. It is used by people who are allergic to gluten to add volume and viscosity to bread and other gluten-free baked goods. It is made from a tiny microorganism called Xanthomonas campestris and is a natural carbohydrate. check out Cathy Lauer new article in the June OK In Health's eMagazine called "Finding a Way to Bake Gluten Free and Egg Free".

Fennel and Arugula Salad with Oranges and Olives

Arugula, also known as salad or garden rocket, is a nutritious leafy green vegetable of Mediterranean origin. It belongs to the brassicaceae family like mustard greens, cauliflower, kale…etc and has scientific name Eruca sativa. Arugula is a quick growing, cool season crop. It prefers well-drained, fertile soil and full sun to flourish. In general, arugula grows to about 2-3 feet in height with creamy white color edible flowers. Its leaves are ready to harvest within 40 days of sowing the seed. As in other greens, arugula is one of very low calorie vegetable. 100 g of fresh leaves provides just 25 calories. Nonetheless, it has many vital phytochemicals, anti-oxidants, vitamins, and minerals that can immensely benefit health. This vegetable also rich in B-complex group of vitamins such as thiamin, riboflavin, niacin, vitamin B-6 (pyridoxine), and pantothenic acid those are essential for optimum cellular enzymatic and metabolic functions. Arugula is good in minerals especially copper and iron. In addition, it has small amounts of some other essential minerals and electrolytes such as calcium, iron, potassium, manganese, and phosphorus.

Relief for Restless Legs?

What can I do about restless legs syndrome? It's driving me crazy. I would prefer not to take drugs.

Restless legs syndrome is a movement disorder that causes unpleasant sensations in the legs - tingling, prickling, crawling, pulling, drawing, and sometimes pain. The symptoms typically come on at night when you're trying to get to sleep, but they can also occur during the day when you're seated and inactive for a length of time - during a meeting, perhaps, at a movie, or while traveling by plane or train.

Although most cases have no known cause, restless legs syndrome can sometimes occur during pregnancy (if it does, it usually disappears soon after the baby is born) and in people with diabetes, rheumatoid arthritis, kidney failure, varicose veins, or peripheral neuropathy (nerve damage in the hands and feet). Researchers suspect a genetic influence, because between 40-60 percent of first degree relatives of patients with restless legs syndrome also develop the problem. Some cases have been traced to iron deficiency anemia. If so, iron supplements might help, but don't try this on your own; no one should take iron supplements except under a doctor's supervision (a doctor can diagnose iron deficiency anemia with some simple blood tests).

No reliable cure is available, but the following measures may help relieve the symptoms:

If you smoke, stop. Smoking may impair blood flow to leg muscles.
Avoid caffeine and alcohol, both of which can make symptoms worse.
Take a calcium/magnesium supplement at bedtime. Try 500 mg of calcium citrate and 250 to 500 mg of magnesium to calm nerves and muscles.
Exercise, stretch or massage your legs (this can help when symptoms are mild).
Take a hot bath to relax your legs.

Tip of the Week:

As the Moon waxes to full on June 4th to produce a Lunar Eclipse, it will shed light upon a variety of significant celestial events. First this is the fruition of the Solar Eclipse from May 20th. This seed event was significant in Mayan Cosmology and several Crop Circles over the years focused upon it. According to Mayan prophesy, it is this lunar cycle that is destined to herald the return of Quetzalcoatl (Aztec) or Kukulcan (Mayan) which is their version of Christ Consciousness. The other key event is the rare occultation of Venus across the Sun. These two events will not coincide again and given that both are key markers in the overall Mayan 12-21-2012 focus, which heralds the beginning of a new Precessional Cycle (25, 625 years) it is very rare and potent indeed. The other significant astrological events poised to occur this month include Jupiter entering Gemini on June 12th, Summer Solstice on June 20th, the day after the New Moon in late Gemi...
