    Raw Borscht Salad with Cashews Dressing

    Description:
    Good ol' Beets. So readily available and oh so good for you! They are loaded with vitamins and minerals and help both build the blood and detoxify it! It combines flavors that you will find very familiar if you've ever had traditional borscht soup. In this recipe you will enjoy celery root, carrot, green onions, beets (of course) and a creamy dressing made from soaked raw cashews, lemon, pepper and dried dill. Beet roots contain unique phytonutrient pigments. Betacyanin is the red pigment found in red Beets and betaxanthin is the yellow pigment found in yellow Beets. Both of these pigments can provide powerful antioxidant protection. Beet roots are also particularly rich in folate, a B vitamin important for a healthy heart and essential for normal tissue growth. Although they are high on the glycemic index (contain lots of natural sugar and quickly rise our blood sugar levels) they are surprisingly low in calories. And, don’t throw out your beet greens – they are an extremely nutritious vegetable. They are an excellent source of vitamins A and C, which provide powerful antioxidant protection from oxidative damage to cellular structure and DNA. They, like the beet roots are rich in phytonutrients and are even richer in iron than spinach.


    Parmesan Chicken Cutlets

    Description:
    Chicken meat is rich in protein - which is essential for growth and cell repair - and low in fat. It also provides important B vitamins. Garlic can be very good for your health and immunity. Chicken is rated as a very good source of protein, providing 67.6% of the daily value for protein in 4 ounces. The structure of humans and animals is built on protein. We derive our amino acids from animal and plant sources of protein, then rearrange the nitrogen to make the pattern of amino acids we require. People who are meat eaters, but are looking for ways to reduce the amount of fat in their meals, can try eating more chicken. The leanest part of the chicken is the chicken breast, which has less than half the fat of a trimmed Choice grade T-bone steak. The fat in chicken is also less saturated than beef fat. However, eating the chicken with the skin doubles the amount of fat and saturated fat in the food. For this reason, chicken is best skinned before cooking. You may add some extra vegetables to this dish by placing the cooked chicken on top of rice or vegetables

    Description:

    Question:
    “I just lost the horse I had owned for 23 years. He was my best friend. I can’t seem to get over the grief, can’t stop crying and I want to move on but can’t, any advice on coping with this emotional challenge?

    Answer:

    This is a question that gets asked so often, as many people have huge problems moving on and getting over the loss of a pet, sometimes it takes years. I have owned and lost many pets in my lifetime, dogs, cats and horses. Some have died on their own and others, you have to make that dreaded phone call to end your animal’s life, which is the worst of all. It does not get any easier, but I have come to a more comfortable place now because of my spirituality, and I know they are only gone in body but not in spirit. I see my animals regularly, galloping across the heavens, or sitting beside me in meditation, I have a whole zoo following me most of the time! Whenever I call on them for advice they are always there, you only have to quiet your mind, ask the question and then listen for the answer.

    Let me explain. Life, both ours and theirs is eternal. We are not born and we do not die, we are created in light and only our physical bodies melt away. Remember Deepak Chopra’s famous words: “we are spiritual beings having a physical experience”. Our animals are gifts to us from Spirit, they are here to be our teachers. They also help us cope with our Karma and whatever we brought in to release this time around.     I opened Evelyn's book The Essence of Sound and my soul grinned. I stand in awe of this woman's gifts, abilities, and insights. She is a visionary and is committed to sharing her wisdom with us. To me, this is an encyclopedia of sound meridians, chakras, auric field and figure eight energies. It's for the beginner and the advanced. She has beautifully combined, in such a user friendly way, the core of energy work into one great book. I immediately felt it to be one of the most comprehensive books on the subject.     Tip of the Week:

    Every 18 months the Moon’s ‘Lunar Nodes’, otherwise called the ‘Lunar Nodal Axis’, changes signs. Although not specifically planets, these powerful points exert a strong influence in our lives. Over the past 18 months the Nodes were in Sagittarius and Gemini and the influence was basically towards increased communications. The steady rise of social media is one example. Now the Nodal Axis is spanning Scorpio and Taurus. Yes, the Nodes progresses in a clockwise direction ad therefore appear to move ‘backward’ through the Zodiac. The basic theme is one of change and transformation. Taurus is the sign most resistant to change and Scorpio is the sign that symbolizes the natural and necessary process of continual renewal and purification. We see this occurring in the natural world geologically, meteorologically (weather) and it is linked to the steady progress of evolution on every front.
