Halibut with Spicy Rub

Description:
Halibut is very popular and can be easily found in supermarkets and seafood markets around the country. The firm, low-fat, mild taste of halibut makes it perfect for a variety of dishes. Leading seafood chefs have picked up on this popular fish and are offering diners spectacular culinary masterpieces. Halibut is being served in gourmet starters and salad, soups and sides, and main dish entrees.

Whether creating something simple or elaborate, halibut is a wonderful fish to create memorable and delicious dishes. Sample the brilliance of grilling halibut steaks or kabobs, dredging in beer batter for deep-frying, or simply placing fish fillets under the broiler and serving with an exotic sauce or salsa. Halibut is perfect in grilled tacos, gumbos, chowders, and cioppino's. Take halibut to another level with a spicy marinade or rub before cooking.


Ingredients:
4 (7 ounces each) Halibut Fillets

Rub:
1 teaspoon Salt
1 teaspoon Dried Thyme
1/2 teaspoon Dried Oregano
1/2 teaspoon Cayenne Pepper
1/4 teaspoon Hot Paprika
1/2 teaspoon Freshly Ground Black Pepper
1/2 teaspoon Fennel Seeds, toasted and roughly chopped
Coarse Salt, to taste

Olive Oil, for brushing
1 Lime, cut into wedges


Directions:
1. Combine salt, dried thyme, dried oregano, cayenne pepper, hot paprika, fresh ground black pepper, fennel seeds and coarse salt.

2. Arrange halibut fillets in ceramic baking dish.

3. Brush fish with oil.

4. Pat fillets with fish rub.

5. Season with salt and pepper.

6. Cover and refrigerate 1 hour.

7. Preheat grill to medium heat.

8. Brush grill rack with oil.

9. Grill fillets 2 to 2-1/2 minutes on each side until browned, and just cooked through.

10. Serve hot with lime wedges.

Coconut Cauliflower Turmeric Rice

Description: One of the best things about Winter is the food, hands down. After a summer of grillin' and chillin', I am feeling a strong call from my stove - it's lonely, it needs some loving. Cauliflower rice totally rocks as an alternative to grains, but what if we could kick it up a notch, maybe give it a little Indian/Thai flavor so that is pairs perfectly with curried chicken and veggies? The answer lies below (and it's delicious).

In addition to being a super low-carb version of a pantry staple, cauliflower is packed with Fiber, Vitamin C, Magnesium, and Vitamin B-6. Even though coconut milk and coconut oil are high in fat, it's the best kind of fat out there. Also, coconut has a plethora of health and beauty benefits including a slimmer waistline, shinier hair, and clear, luminous skin. As a bonus, the cardamom in this dish has detoxifying and anti-inflammatory properties.
