Oh So Good Salsa

Print Friendly

Description:
This eay to make Salsa is a raw food recipe. Tomato salsa, if prepared using fresh ingredients, has several health benefits. Tomatoes contain large amounts of vitamin C and beta carotene. Because of the fresh ingredients, you can include tomato salsa as one of your suggested four vegetable servings per day. Just 1/4 cup of fresh tomato salsa counts as a single serving.

Ingredients:
-3/4 cup sweet onion
-1 cup fresh cilantro
-3 tbsp freshly squeezed lime juice
-3 tbsp raisins
-1 tbsp olive oil
-6 garlic cloves
-1 ½ tsp sea salt
-1/2 tsp cayenne (or 1 tsp finely chopped jalapeno)
-4 cups tomatoes
-1 cup red or yellow peppers

Directions:
You can either finely chop all ingredients by hand for a coarser texture or simply put all ingredients into a food processor and pulse until desired texture is achieved. Be careful not to over process this mixture as you will be drinking your salsa…lol

Now you simply can’t have Salsa without the crackers/chips to dip into it. A match made in heaven (in my mind anyway) see the Raw Corn Chip recipe.

Wellness Tip
Danger! Over-hydration
Exercise-related over-hydration may occur during prolonged exercise or sports when fluid intake, including water and soda, exceeds fluid loss. If too much water dilutes the body's salts, it can cause brain cells to swell and push against the skull. For this reason, sports drinks often contain salt to balance the fluids. Over-hydrating can cause nausea, severe fatigue, disorientation, and vomiting. In the most severe cases it can also cause seizures, coma and even death. All endurance athletes who drink too much fluid, to quickly are at risk for over-hydration. Seek medical assistance if symptoms occur.

What is the Difference Between Free Run and Free Range Eggs?
I am confounded by the difference between free range and free run eggs. In my lazy attempt to be a good consumer, I try to go for the one that subjectively sounds the best, and promise to go home and do my homework. I am sharing my results with you.

Recipe
Gluten-Free: Amaranth, Quinoa and Dark Chocolate Cake
Category: Gluten-Free
Description: Amaranth: This Central American ancient food has been cultivated for 8000 years, and is comparable to rice. Considered a grain, it is actually a seed. Amaranth is especially high in lysine, an essential amino acid most grains lack. Plus it is gluten free!
Amaranth is a pseudocereal that has been consumed as a grain since ancient times; the tiny buff-colored amaranth spheres were important in both Aztec cuisine and culture. Amaranth grains are rich in high-quality protein and minerals, and are naturally gluten-free.
The health benefits of Amaranth are that it is rich in Iron, Manganese, Magnesium, Potassium, and Phosphorus. It can be used ground as flour, cooked as a cereal, sprinkled on foods or even used as a thickener for soups. To cook, combine 1 part raw seeds to 2 1/2 parts liquid. Simmer 18-20 minutes, until soft. Amaranth may be toasted like pop corn and mixed with honey to make a treat called " alegria" which means "joy" in Spanish.
