Oh So Good Salsa

Description:
This eay to make Salsa is a raw food recipe. Tomato salsa, if prepared using fresh ingredients, has several health benefits. Tomatoes contain large amounts of vitamin C and beta carotene. Because of the fresh ingredients, you can include tomato salsa as one of your suggested four vegetable servings per day. Just 1/4 cup of fresh tomato salsa counts as a single serving.

Ingredients:
-3/4 cup sweet onion
-1 cup fresh cilantro
-3 tbsp freshly squeezed lime juice
-3 tbsp raisins
-1 tbsp olive oil
-6 garlic cloves
-1 ½ tsp sea salt
-1/2 tsp cayenne (or 1 tsp finely chopped jalapeno)
-4 cups tomatoes
-1 cup red or yellow peppers


Directions:
You can either finely chop all ingredients by hand for a coarser texture or simply put all ingredients into a food processor and pulse until desired texture is achieved. Be careful not to over process this mixture as you will be drinking your salsa…lol

Now you simply can’t have Salsa without the crackers/chips to dip into it. A match made in heaven (in my mind anyway) see the Raw Corn Chip recipe.

Cherry Tomatoes Stuffed with Healthy Guacamole

Tomatoes are the best when they are in season from July through September.
The carotenoid found in tomatoes (and everything made from them) has been extensively studied for its antioxidant and cancer-preventing properties. The antioxidant function of lycopene-its ability to help protect cells and other structures in the body from oxygen damage-has been linked in human research to the protection of DNA (our genetic material) inside of white blood cells. Prevention of heart disease has been shown to be another antioxidant role played by lycopene.
Lycopene has been shown to help protect not only against prostate, but breast, pancreatic and intestinal cancers, especially when consumed with fat-rich foods, such as avocado, olive oil or nuts. (This is because carotenoids are fat-soluble, meaning they are absorbed into the body along with fats).
