It is simply YUM, fresh, super easy, and wait until you hear of the benefits!
PARSLEY: This herb has so many health benefits. Parsley is rich in the beauty Vitamins A and C, folic acid, and has flavonoids that act as antioxidants- which put the kibosh on free radicals creating damage to the cells. Parsley is also very high in iron, and the high vitamin C content assists the absorption of iron. It is a blood purifier and helps to kill bacteria in the body. Parsley is an excellent digestion restorative remedy. It improves the digestion of proteins and fats, and because of its high enzyme content, parsley benefits digestive activity and elimination. It also helps cleanse the liver of toxins and rejuvenates it.
If that weren’t enough, parsley is also high in B12, chlorophyll and essential fatty acids- and helps balance hormones in women! Now I bet you think of parsley as more than that a dinky garnish you push to the side of your plate.


Ingredients:
1 bunch cilantro
1 bunch parsley
2 scallions (green onions)
½ pint cherry tomatoes
1 Tbsp agave syrup
1 avocado (diced)
1 cup raw almonds (soaked or un-soaked)
1 lemon juiced
1 Tbsp olive oil
1 tsp salt


Directions:
Take cilantro and parsley leaves off of stems and rinse and spin dry.

Chop and add green onions, tomatoes and avocado.

Food process almonds until fine. Add to vegetables.

In small bowl mix lemon juice, oil, salt and agave and pour over vegetables and mix.

Don't forget about portion size when dining out. A 3.5 oz. hamburger made with extra lean ground beef, cooked to medium, contains about 250 calories, 16 grams of fat, 6 grams of saturated fat and 82 mg of cholesterol. Upgrade that to a half-pound of meat and you are looking at almost 600 calories, 36 grams of fat, 13 grams of saturated fat and 185 mg of cholesterol. What a whopping difference! Stick with smaller portions of meat. Three ounces is about the size of a deck of cards.
