Spinach & Cilantro Pesto

Print Friendly

Description:
One leafy, green vegetable that I cannot seem to get enough of is Spinach. Spinach is so versatile, from spinach salads, to spinach smoothies, to spinach soup. You name the recipe and spinach can be added to it. And talk about nutritious…remember Popeye?? The health benefits of spinach are numerous. It sits at the top of many super food lists. Spinach is loaded with calcium, folic acid, vitamin K and Iron. It is also rich in Vitamin C, fiber and caretenoids. Add its lutein and bioflavanoids and spinach becomes a nutritional powerhouse.
The combination of flavours in the following recipe are simply divine. I’ve cheated a bit and toasted the cashews, but it’s worth it for the enhanced flavour.

Ingredients:
5 cloves garlic, minced
3 green onions, chopped
4 tbsp fresh lemon juice
1 ½ cups toasted (raw) cashews
3 cups fresh spinach, chopped
1 ½ cups fresh cilantro, chopped
1 tsp. sea salt
4 tbsp olive oil

Directions:
Combine the garlic, green onion, lemon juice and cashews in a food processor. Coarsely blend and then add a third of the spinach and cilantro, plus the salt. Blend. Add the remaining spinach and cilantro, alternating with the olive oil, pushing down the sides with a spatula between blending, until all is well blended.

Your Raw Corn Chips work beautifully with this Pesto. See recipe in OK In Health's Raw recipe section.

Body & Soul Wellness Fair - Vernon - March 2019

Wellness Tip
Lots of Diets
Did you know that 65 million Americans go on a weight loss diet each year? And that as many as 48 million Americans are on a diet on any given day? Try on this idea: Dieting is not the solution for being overweight or obese. At best, diets are only a very temporary fix. Adopting gradual, but sustainable improvements to your eating and exercise habits are what can last you a lifetime.

Eating in Season
The term “seasonal eating” is sometimes tossed around these days in diet books and even on menus. The idea is that, for optimal health, we need to eat the foods that are available locally at each time of year.

Jody's Honey Curry Salad

Description: This recipe is packed with flavour...a great way to get your family addicted to salads! The kids will love the blueberries plus they have such great health benefits for all the family. Blueberries are rich in Vitamins A, C, E and beta-carotene as well as rich in the minerals potassium, manganese, magnesium. They are very high in fiber and low in saturated fat, cholesterol and sodium. But this is just the tip of the nutritional iceberg, for recent studies tell us that of all fresh fruits and vegetables, blueberries provide the most health-protecting antioxidants, those valuable elements which prevent cancer-causing cell damage and may limit the changes wrought by age related diseases. The properties of blueberries cross the blood brain barrier to effect these benefits. Antioxidants help to stop the production of free radicals. Free radicals are groups of atoms that impair the cells and the immune system which leads to disease. Anti-oxidants bind the the free electrons in free radicals.
