Barley Salad with Fresh Vegetables

Print¬†Friendly

Description:
This summer salad combines barley, a great-tasting grain, with fresh vegetables. Flavored with mint, parsley, garlic and lemon, it might remind you of tabbouleh, a Middle Eastern dish traditionally made with bulghur wheat. Barley has a wonderful texture, and parsley has carminative (intestinal gas-relieving) and diuretic properties, making it an excellent tonic ingredient. Look for the flat-leaf (Italian) parsley, which has a more pronounced flavor than the curly-leaf variety. This dish makes a healthy alternative to the usual picnic or potluck potato salad. Try it as a light meal all on its own, or as a wonderful accompaniment to other dishes.

Ingredients:
3 cups vegetable stock or water
1 cup pearl barley
Salt to taste
1/2 cup chopped fresh (Italian)parsley
1 bunch scallions, sliced thin
1 bunch radishes, sliced
1 cucumber, peeled, seeded and diced
1 red bell pepper, seeded and sliced
1/2 cup chopped fresh mint (or 1/4 cup dried mint)

Dressing:
3 tablespoons extra-virgin olive oil
3 tablespoons fresh lemon juice
3-4 cloves garlic, mashed
Salt to taste

Directions:
1. Bring to a boil the vegetable stock (or water). Add barley and salt. Cover, reduce heat, and simmer until barley is tender and liquid is absorbed, about 45 minutes. Drain well and place in a medium bowl.

2. Mix the dressing ingredients together and pour over barley.

3. Allow barley to cool, then add the parsley, scallions, radishes, cucumber, red pepper and mint.

4. Mix well and chill for several hours before serving

Celtic Healings Intuitive Readings with Maria O'Farrell Carr

Wellness Tip
Exercises are Mood Altering
Proper exercises can even elicit powerful mood-lifting changes. In fact, a major study performed at Duke University Medical Center in England showed that certain exercises can be just as effective as some of the most prescribed medications when it comes to alleviating major depression. The study looked at 156 elderly patients diagnosed with major depressive disorder over a 16-week period. The participants were assigned to three separate groups: group 1 exercised but had no antidepressants; group 2 took anti-depressant medication with no exercise; and group 3 took antidepressant medication and combined this with exercise. To the amazement of the researchers, all three groups showed remarkably similar improvements in their depressive states following the 16-week trial. This study, as well as numerous others, has proven that exercise should be considered a viable alternative to medication when it comes to one of our most treated disorders of aging.

Recipe
Pam's Tuscan Kale Salad
Category: Salads
Description: Kale has a history of being a pretty green vegetable that you would see on the side of a plate as a garnish, or hidden in a soup or stew. It has not been popular as a vegetable in its own right. However, kale is making a come back as a delicious food that people can't get enough of. Kale Salad and Kale Pasta are but two of the favorites in my family.

Let's look at the high nutritional value of kale. One cup of chopped kale has approximately 34 calories, 2 grams of protein, and more vitamin C than an orange! It is a rich source of iron and calcium. It is a great source of omega-3 fatty acids that are essential for brain health, and boosts heart health. It also contains Vitamin A, Vitamin K, and Folate. These carry powerful cancer protecting antioxidants.

Kale tends to have a bitter taste unless it is prepared correctly.Below is a recipe that tastes good.
