Cucumber - Avocado Soup

Description:
When in Season Simple Soup.
Cucumber is best natural diuretic known, secreting and promoting the flow of urine. Helps in kidney and urinary bladder disease, Liver disease and Pancreatic disease. The potassium content of cucumber makes it highly useful for conditions of high and low blood pressure. Cucumber contains erepsin, the enzyme that helps to digest protein.

The avocado is colloquially known as the Alligator Pear, reflecting its shape and the leather-like appearance of its skin. Avocado is derived from the Aztec word "ahuacatl".
Avocados (contains 14 minerals to regulate body functions high in Lecithin which feeds brain and reduces fat in the body; excellent source of protein; prevent anaemia).
Avocados contain oleic acid, a monounsaturated fat that may help to lower cholesterol.
Avocados are a good source of potassium, a mineral that helps regulate blood pressure.


Ingredients:
1 cucumber, cubed
1 avocado, cubed
mint (optional)


Directions:
Place ingredients in food processor with S blade. Mix until almost smooth. Serve garnished with mint leaf.

Description: Cruciferous vegetables are known to have protective effects against cancer. DIM is destroyed by cooking – so getting some raw seems like a good idea. Diindolylmethane (DIM) is being studied at UC Berkeley for its role in cancer therapy. DIM is found in raw cruciferous vegetables like broccoli, cabbage, brussels sprouts, cauliflower and kale. There is the popular broccoli salad with mayonnaise, sugar and bacon, but I wanted a healthier version. Here is what I came up with. I love it when healthy habits taste so great.
